BBQ Tofu Tacos + Mexicali Slaw

Hi, foxy friends! It’s been starting to feel very fallish here and I ain’t complaining, though I do understand peoples’ desire to hold on to the last bits of summer. I spent the weekend with the windows wide open (giving the A/C a rest), hugging on my pups (see our old gent, Theo, below), watching WAY too much Drugs, Inc and Alaska State Troopers (these shows are nuts and will totally make you feel like your life is more organized and on-track than you think), and gearing up for a cooking demo/catering gig this week where I’ll be making a few of my favorite recipes and showing some very glam ladies how to do the same.

Easy and tasty are the names of the game here, and these tacos are both (yes, I use bottled BBQ sauce and dressing and pre-made corn tortillas, because sometimes a bitch gets busy and doesn’t wanna be elbow deep is masa, okay? GASP!) and incredibly versatile. You can dress them up fancy or just take them as is and dig in. Oh, and did I mention they’re mad economical? If you have some of these ingredients on hand, this whole meal will cost you around $12 bucks, which is about the going rate for a top-shelf margarita in Chicago.

This recipe is also further proof that Trader Joe’s just needs to pay me royalties or something, because I’m always using their stuff. Luckily, if you don’t have a TJ’s near you, there are plenty of other formidable options for BBQ sauce and dressing bliss!

BBQ Tofu Tacos with Mexicali Slaw

  • Yields: ~ 12 tacos
  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Allergy Information: Gluten-free, Dairy-free, and Egg-free

Ingredients:

For the BBQ Tofu

  • 2 packages (~ 14 oz each) organic extra firm tofu (I used Nasoya because I really like the density of the tofu)
  • 1 tsp olive oil, for sautéing
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tsp ground ginger
  • Freshly ground sea salt and pepper to taste
  • 2 tbsp olive oil, for sautéing
  • 1/2 cup vegan BBQ Sauce
  • 1/8 cup water, if needed

For the Mexicali Slaw

  • 1 small purple onion, diced
  • 3 green onion stems, finely chopped
  • 1 package (~ 10oz) of shredded green cabbage (purple or a mix are fine, too)
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 cup Annie’s Goddess Dressing (or TJ’s Goddess Dressing)
  • Juice of one lime
  • Freshly ground sea salt and pepper, to taste
  • 1 package (about 12) of corn tortillas (I used TJ’s brand)
  • Optional garnishes: Fresh cilantro, toasted pepitas, cashew crema, Sriracha (or preferred hot sauce), vegan cheese.

Assembly:

  1. Make the slaw first to allow time for it to chill in the fridge. Combine all slaw ingredients in a bowl and mix well. Place covered in refrigerator to chill before serving.
  2. Remove tofu from packages and drain the liquid. You can make this recipe simply by patting the tofu bricks dry with a paper towel, if you like, but for the more ambitious among us, feel free to use a tofu press to extract all of the water to get a really dry, firm product.
  3. Dice tofu in to 1/4 inch pieces and place in a nonstick skillet. Do not turn on the heat yet.
  4. Add cumin, smoked paprika, ground ginger, and salt and pepper to tofu and coat all pieces evenly with the dry mixture.
  5. Add a spray of olive oil and saute tofu on medium until the spices caramelize slightly and the tofu is cooked through (about 8 minutes).
  6. Once cooked, reduce heat to low-medium and add BBQ sauce and water (if you desire a more saucy consistency). Coat tofu completely and allow to cook and caramelize on tofu (about 5 minutes). Remove from burner and allow to cool for a minute.
  7. Cover tortillas in a paper towel and microwave for about 1 minute or until supple. Alternatively, you can warm tortillas directly on a stove burner at low heat (this is not for folks who don’t like to monitor their food) until supple. Whatever floats your boat, peeps.
  8. Assemble tacos as follows: Place tortillas on plate, add tofu, top with cold slaw. Feel free to get crazy with other garnishes like fresh cilantro, a slice of juicy lime, toasted pepitas, cashew crema, or Sriracha or other hot sauce. I take mine with pepitas, Sriracha, and a lil squeeze of lime. Heaven.
  9. Enjoy with lots of napkins, good peeps, and a margarita.

  2. These look perfect! I really love trader joe’s stuff too and you actually reminded me that I had some of the South African smoke seasoning in my cabinet and I use it all the time now. Have you tried their Carolina Gold bbq sauce (I think it’s new)? It’s addicting.
